I made my first effort at gluten free, dairy free baking yesterday. I used a brownie recipe from the book
"Cooking for Isaiah" that I checked out from the library. They are the super fudge brownies on page 201. Because it was for a birthday treat I added some chocolate "frosting" on top. I used the recipe on
THIS blog but since it was a last minute decision I had to substitute the grape seed oil for coconut oil that I had on hand. I had trouble getting it to "whip" up. Probably because I put it in the freezer and then didn't set a timer and got distracted with other things (namely two kids and a dog) and before I knew it it was frozen solid. Anyway...I did get it to thaw and then thicken enough to be a really nice drizzled frosting rather than spread on and that looked nice too.
Final product = very fudge like and chocolaty. Everyone ate them and the kids liked them and no one questioned if they were made with "weird" ingredients or thought they were any different from regular brownies. They were rich enough that I'm glad I didn't spread on the frosting because I think that might have been too much.
Ingredients - the book has a gluten free flour blend recipe in it and the brownies use that. They do contain eggs but no other "big" allergens. They are rich enough and gooey enough that I think you might be able to get away with substituting milled flax seed and water for the eggs.
